Bodem
Oost-West terrassen 260-350 m boven de zeespiegel. Koele ligging met als bodem tertiaire Löss met veel kiezel. De hoger gelegen wijngaarden grenzen aan de Gföhler gneiss. Of gneis = rots. De wijngaarden worden groen ingezaaid. Geen pesticiden of herbiciden. Als mest wordt er biologische rundercompost vermengd met druivenschillen en pitten, stro, vermalen wijnstoktakken en humus.

Vinificatie
Handmatige oogst, nauwkeurige druiven selectie en zacht persing. Koele vergisting op roestvrij staal. Zeer weinig zwavel.

…but first back to the start - to the beginning of the year 2018
Winter was cold, sometimes bitingly cold, with temperatures down to -15 C at the end of February. The cold snap lasted until March and slowed down the development of the vines. When April came things changed. The temperatures rose to peaks over 30° and challenged our viticulture-team massively.
20 people were working continuously to get the foliage management under control. A huge THANK YOU once more to all the guys helping us - it would not have worked out so well without you.
At the end of April we already expected 2018 to become an early year. The premature flowering was thus in line with our suppositions. Anyway, the weather was brilliant.
Summer was very dry with sparse precipitation. Rain dances just brought us some heavy storms but no permanent rainfall. Climate change was palpable on an everyday basis - either there was no rain at all or we got so much of it that it was difficult to deal with it. Regarding extreme weather conditions we are very lucky that we already started decades ago with the buildup of a deep humus-layer and the cultivation of a perennial green cover.
Together with the deep loess-soils, these measures keep the water inside the earth and do not make us dependent on the use of artificial irrigation. Additionally, they make the vines root deeper and get thereby more terroir into the wine.
Still, not everything went according to plan. Already very early, Hans Bauer, our „master of the vines“, detected a particularly dense setting of the grapes. Looking out for possible solutions Bernhard remembered that in hot years the wine-growers in Burgundy (his big passion aside Grüner Veltliner) reduce the grapes on the bunches in order to retain their acidity and be able to produce elegant and terroir-based wines.
Thus we applied this approved technique also to our vines. Twelve of our most experienced vineyard workers dedicated themselves for five weeks to this tedious and meticulous task and diminished the possibly quantity by fifty percent.
