In 1986 is Paolo Saracco de Moscato zelf gaan bottelen. Hetzelfde moment waarop hij de teugels van zijn vader, Giovanni Saracco, overnam onderging de Moscato een gedaantewisseling. De Moscato d'Asti van Paolo Saracco wordt in Italië tot de beste drie gerekend. De spumante werd ingewisseld voor een Frizzante. De vermoeide tonen van gekookte appels en een lichtzoete weeïgheid hebben plaats gemaakt voor perzikaroma's, citrus en kruidige indrukken zoals salie.
